Halloween snackies.

I have two Halloween parties, one with kids and one without to go to this weekend, and need to take a snackie for both so I made this cute little dish just now and wanted to share it with you before all the festivities have come and gone......now you can all be as fantastic as me bahahahaha!!!!!!!
It's not baked yet but I don't imagine I'll be thinking to use my camera later to show the finished product all hot and gooey. I am having a cheat weekend and allowing my poor body some carbs, so I may crawl under a rock in shame for a while!!!!


The kids got to dress up for school today and had a chance to test drive their costumes before Sunday night, I'm a little worried about the warmness factor for Halloween night, I may need to pull a rabbit out of my hat to deal with that!!





Dace and I are going as a famous couple from the 80's..........any guesses?? HINT.......that's the back of my head!




Anywho, here's the recipe. Well its not really a recipe, more like instructions to yumminess.

Baked brie with cranberries and carmelised onions.

I purchased the largest wheel of brie I could find, you could go smaller, but really, why would you????
So its really easy....first carmelise some onions with lots of butter, olive oil, a little brown sugar and some port or balsamic vinegar. Get them all yummy and allow to cool.


I  used store bought PC brand cranberry and orange jelly, spread on top of the brie almost to the edge, and topped with the carmelised onions.
Roll out one package of puff pastry large enough to cover the top and sides of the brie and tuck as much as you can underneath, you want to encase the while thing if possible.
I trimmed a little of the pastry before this step to use for the web and spider.
Wrap up your brie as best as you can and decorate to your liking.
Bake this for about 15 minutes I'm thinking around 350c.

I heart moss

OK, so I may have gotten my neighbours thinking I've totally lost the plot due to my recent rampage down my street gathering moss. No biggie...right?
With winter slowly approaching and all the leaves turning beautiful shades of orange, yellow and red you can't help but notice the bright green moss growing on the side of the road. I just had to have me some.


I have no idea how to keep this stuff alive and I'm positive that I will more than likely kill it  but it's OK, there's plenty more where this stuff came from.
So yesterday when I was supposed to be cleaning my living room like a good mommy does while her kids are in school and she has those precious few hours to go on a scrubbing, mopping rampage....I, instead found myself tearing and stuffing lovely mounds of green moss at the base of my house plants.Followed by a lovely fall centrepiece for my dining room table that only I will appreciate and admire because apparently my family just doesn't get the whole moss thing......actually, I don't think they even noticed.


Decorating can be such a thankless job, but someones gotta do it!!!

My breakfast

OOOOOh my breakfast was so yummy this morning I just had to tell someone.
While the rest of my family enjoyed a hearty breakfast of creamy chicken crepes and corned beef hash, I on the other hand with my low carb, no sugar, no fun eating plan surprised myself with a wonderful new creation.


 Baked eggs with salmon, dill and baba ghanoush. It was just what I needed to break me out of the drudgery of scrambled eggs with sour cream and salsa every morning.

RECIPE:

Start with a small buttered oven proof ramekin and plop a dollop of baba ghanoush (approx 1 teaspoon) in the bottom.  Like so......


My wonderful husband went on a fishing trip earlier this year and filled our freezer with yummy salmon, so I used some left overs from dinner for this recipe. My salmon had already been baked with lots of fresh dill and lemon juice.
I shredded some salmon then added it to the ramekin with some more fresh dill.


Then this is the fun part, you crack an egg on top, add some more salmon, baba ghanoush and some sharp white cheddar to finish it off.


I set my oven to 350C and made a water bath for my ramekins in a loaf pan, gently placing them in the water so as not to make a big splash. Its easier to put the ramekin in first I guess and THEN add the hot water!!!
Bake for about 15 minutes, a little longer if you like your yolk hard, they come out of the over looking like this......mmmmmmmm


Just look at all that yummy goodness.

I'm baaaaaaack....

I don't know which techno god to thank but, today out of the blue I am able to magically upload pics again.  No more banging my head on the keyboard, cussing at the computer or pacing back and forth in my office.
 Aren't you so glad????????? Now I can share pictures of random stuff like this................


..just a little of the local wildlife we saw on the way to Karate the other day.

(Maybe the more likely scenario is that my hubby was tired of me complaining and fixed the waffle fluffer thingy that was causing the problem).
Looking back at all the pics from the last month I just don't know where to begin, it's been a very busy few weeks with thanksgiving, my birthday, Marleys birthday, Zoe's birthday, Gramma and Popsie visiting, school volunteering, roofing disasters.
I guess I'll have to just take a deep breath and start from today..
The kids have a Pro D day after a round of first parent teacher interviews this week. I'm so proud of both my girls, I'm sure there will be ups and downs but they have both made a great start to the school year, I am one proud mama bear. ( Reminds me of a recent bear incident, but we'll get to that later).
So as a reward for all their hard work we are going to hang out at Davison Orchards this afternoon, maybe get a few pumpkins for Halloween and just enjoy the last of the fall season before they close for the winter.

The lights are on but nobody's home.....


I think I've been feeling a little off and overwhelmed lately...hence no blog posts. Its not like I've been doing nothing, in fact we've been busy, but I need to climb out of this funk.

I celebrated my birthday this month, the big 3 6, what a wonderful surprise that was. My besties kidnapped me and took me to Vancouver for a weekend of gluttony, shopping and giggles. 5 ladies and a mini van....what more can a girl ask for?

For some reason blogger is being a cheeky bugger and is not letting me upload any pics today. I have some yummy recipes to share with you all and some pics from the last few weeks.

I will check in this week and give the down low on all the fun stuff. My two not - so - little ones are both celebrating birthdays this month too so I have some parties to plan. Feel free to throw some ideas in this direction.
